I think of chilli as a flavour enhancer. Of course if it is applied too heavy handedly then it overwhelms other flavours but in moderation it enhances the flavours of other foods.

Do any of you use and like Sriracha hot chili sauce?

I love hot sauce. One of many I use is a sriracha style sauce made with bhut jolokia and 7-pot peppers. Another favourite is made with moruga scorpion peppers.
